POKOTABI / bob bagel
bob bagel
At bob bagel in Kita-Shinagawa, chewy New York–style dough meets inventive fillings ranging from Misaki bigeye tuna to red bean paste and Minimal craft ganache.
01 / ABOUT THE PLACE
Substantial and dense in the hand, the bagels along the historic road in Kita-Shinagawa at bob bagel draw directly on New York tradition for their chew and springy bite. A fragrant, crisp exterior contrasts with the elastic crumb inside, letting the flavor of the flour come through cleanly.
The fillings are designed to stand up to that hearty bread. On the savory side, the "Maguro" layers Misaki bigeye tuna, avocado, green-onion cream cheese, and capers on an everything bagel. The clean taste of the lean red tuna works against the richness of ripe avocado and cream cheese, anchored by the savory punch of the seasoning blend. Classic "Lox" brings Shinshu salmon together with dill and fresh tomato, while house-made chicken ham is paired with spiced curry sauce for those after something more substantial.
Sweet pairings show equal inventiveness. The "Tsubuan" balances mellow cream cheese and a pinch of salt against chunky sweet red bean paste inside a lightly sweet kokuto (brown sugar) bagel. In the "Chocolate Butter," house-made ganache made with Minimal's Madagascar cacao is combined with cultured butter and candied iyokan peel, while a cinnamon-raisin bagel gets layered with caramel sauce and rum-raisin butter, each combination carefully tuned for texture and aroma.
Hand-drip coffee brewed with beans from Humming Coffee is on offer, featuring a choice between the light roast "Aya," medium roast "Ibuki," or dark roast "Shingetsu." While most order takeout, a few eat-in seats let guests tuck into a thick sandwich alongside freshly brewed coffee right away. On clear days, taking a wrapped bagel to a nearby park is just as pleasant an option.
